Famous Italian pizza

Italian cuisine is not exotic; we know a lot about it. And outside of Italy, you can buy a slice of pizza in fast food, order risotto with truffles in an expensive restaurant, or cook spaghetti carbonara at home. But, once in Italy itself, it is important and necessary to eat right, because food is an essential part of the life of every self-respecting Italian.

To eat correctly means to try the specialties of the region in which you are located, preferably in accordance with the season, and not in tourist places, but in trattorias where the locals themselves like to eat. This is a guarantee of proper preparation, the use of fresh ingredients and, of course, great taste.

Many blame Italian cuisine for the lack of sophistication. But the external effect is not important. The important thing is the pure and simple pleasure that you get from a delicious meal. It is through the kitchen that the Italians can be better understood and recognized.

It would seem that about that, but about pizza, which has become an integral part of globalized fast food, it is difficult to tell something new. Fast food does not even want to be mentioned in vain, the real "right" Italian pizza is baked in accordance with strict rules and always in a wood-fired oven. Pizzerias with such an oven usually have the sign “Forno” or “Forno a legna”.

There are two main types of pizza - Neapolitan and Roman. The fundamental difference between them is the basis of the test. Neapolitan more airy, elastic dough, like a flat cake. And the Roman - crisp to burnt, thin and flat.

A sign of good pizza is a small amount of ingredients (usually two or three) that harmoniously complement each other to taste. The ingredients of the classic Neapolitan pizza Margherita are tomato sauce, cheese and basil, as the colors of the Italian flag. When eating a Neapolitan pizza, fold it like an envelope so that the filling does not leak. On dry Roman pizza, the filling holds up better, and there is more field for experimentation. Try the toppings: prosciutto with arugula, truffles with buffalo mozzarella, eggplant and cheese.
